NSF and UL are product listings, not paperwork you can add later. If your factory has never listed a product, budget 12–20 weeks and USD 6,000–20,000 per family for testing and inspection — or choose a plant with existing listings you can extend.

What separates a good fabricator from a cheap one

  • Gauge honesty. A "1.2 mm" top that measures 0.9 mm is the most common cheat. Micrometer-check every shipment.
  • Grade. 304 for food contact, 430 only for non-contact panels. Use a magnet and a spot test kit; grade substitution is frequent.
  • Welds. Continuous, ground and polished welds on food-contact seams; no exposed spot welds where debris can lodge.
  • Radii. Coved internal corners with a minimum 5 mm radius are required by hygiene design rules and by NSF.
  • Undershelf and leg structure. Adjustable bullet feet, sealed tube ends, no water traps.

Refrigeration needs extra scrutiny

If you buy refrigerated cabinets or prep counters, verify:

  1. Refrigerant type against destination rules — R290 hydrocarbon is now common but has charge limits and EN 60335-2-89 handling requirements
  2. Climate-class testing at the ambient your market actually uses (climate class 4 or 5 for hot markets)
  3. Compressor brand — substitution of a named brand is a frequent cost-down
  4. Energy label data where the EU or Australia requires declared consumption

Freight economics change the design

Kitchen equipment is bulky and light. Volumetric cost dominates, so:

  • Ask for knock-down (flat-pack) construction on tables and shelving where the market accepts assembly
  • Nest sinks and stack shelving; a good loading plan can cut container count by 20–30%
  • Specify corner protection and edge foam — transit dents are the top rejection cause
  • Confirm crating for glass-door cabinets and vented hoods
